Echizen-cho, Fukui Prefecture, in winter, with its rough seas, is famous for its top-brand Echizen crabs.
We use genuine tagged Echizen crabs landed in Echizen-cho, Fukui Prefecture.
It is also important to carefully select crabs that are heavy, thick, and good-looking when you hold them in your hands based on our past experience.
As time passes, the crab becomes thinner, loses water, becomes dry, and loses its sweetness.
Generally, it takes 3 to 7 days from the time the fish is landed to the time it arrives at the restaurant because it goes through multiple distribution channels, but we have a system in place that allows us to purchase the fish at Echizen Fishing Port and ship it directly using our own distribution channels.
We release the freshly caught Echizen crabs into the restaurant's keshi, where they are released live and all the mud that causes the crab to taste bad is expelled, so that each crab is prepared and served in its most delicious state by our artisans with confidence.
