This is the basic course to taste the power of Echizen crab most honestly.

This course focuses on "crab sashimi," which is only allowed for Echizen crabs that are fresh and of a certain quality.
After the Kabako Crab and Hachisun, the crab sashimi is served with the fiber tension and sweetness sharpened to its peak, and is served as grilled crab meat, crab miso shabu, crab claw gratin, and more,
The aroma and flavor changes over time as the crab is cooked, carefully connecting the breadth of the Echizen crab's ingredients.

Uozora's top-class kaiseki, in which all the edible parts of the Echizen crab are prepared in the most suitable way.
The menu continues with Kabako crab, uchiko and salmon roe, crab sashimi, and shabu-shabu, with the transition of heat, temperature, and fat in each dish being sorted out as the flavors are layered.
The menu includes Temari Sushi with crab meat and sea urchin, crab claw gratin, grilled crab claw, crab miso shabu-shabu, and fried crab claw, all of which are made with the best techniques for each part of the crab and transformed into delicious flavor.
