It is a "bigeye tuna".

Nodoguro is a fish belonging to the family of the firefly cod family in the suborder of sea bass. In fact, "nodoguro" is a common or common name, and the official name is "akamitsu" (red rockfish). As the name suggests, the flesh is red, and the fish is so rich in fat that it is called "white meat toro," or "white meat toro," and offers an elegant flavor.

Sashimi, simmered or grilled, it is a delicious fish that we especially recommend.

Today, I would like to introduce "Aged Bird's-Eye", which I particularly recommend.

Aged grilled nodoguro is especially rich in fat and matured to a higher level of flavor. Although it takes some time to cook, the dish is so full of flavor that the time spent waiting is not worth it!

Aged grilled Nodoguro is aged for 3 days and displayed in front of the counter. Sake goes well with the matured Nodoguro, and the more you eat it, the more sake you will drink. It is a truly delicious dish that goes well with our locally brewed sake!
