This one, as stated, is made with tomatoes from Kumamoto Prefecture.
The shaking of rock salt will intensify the natural taste and aroma of the tomatoes.
Tomatoes, in particular, contain high levels of glutamic acid, an umami ingredient, so when they are aged, their umami flavor becomes quite rich.
The freshness is still there, and the umami is intensified as it matures, which is a characteristic of salted tomatoes.
