Today I have an announcement to make to all of you.
We are pleased to announce that our specialty "Yobuko spear squid" will be changed to "Yobuko water squid".
The reason is that spear squid is hard to come by from this time of year, and water squid is in season.
Water squid is also known by its familiar alias, the bluefin squid!
Unlike spear squid, water squid has thicker flesh and a slightly different texture. However, it is in season from now on, so its sweetness is stronger than that of spear squid, which is also a very special characteristic of this product.
Live squid is also a very tasty dish!
This kozuke can be served as sashimi, grilled, or tempura, but since the fish is so thick, we recommend tempura or grilled ✨.
