Our restaurant has a large showcase at the counter, inside of which are fresh Fukuoka vegetables "Itoshima vegetables" and aged Tsushima "nodoguro" (sea bream).
The nodoguro (sea bream) here is carefully handled by artisans, and the aging process enhances its flavor!
It is also a fatty fish that goes very well with beer and sake.
